Beef with Broccoli

Beef with Broccoli

* o( @/ n  l. O9 X. C- k  `0 O* v' c. `( b3/4 lb (375 g) lean beef, sliced thinly into bite-sized pieces, X. u( ^, p$ z7 g

  F2 M$ y" @( P# S- dMarinade for Beef:
7 r, U2 Q% I4 V1 M. J$ c' P1 egg + V4 D% M0 L, d4 v
1/3 tsp (1.5 mL) salt
# S3 D1 n" F8 Y* y$ M: d4 r1 Tbsp (15 mL) cooking wine
" c$ k5 e& b: i1 ~" a5 V% \- B1 Tbsp (15 mL) cornstarch
* C1 h. |4 K5 s! I8 t2 Tbsp water, J' A/ m8 q' I- b

, M% y, |( x& q5 `/ X# l4 K& ^9 W$ \1 1/2 Tbsp (20 mL) oil
* U+ t/ v9 i+ `  O, i  @, V% T% |: Q$ N; a6 _) t  f7 h5 ^
1 1/2 lb (750 g) broccoli, flowerets removed, slice on the diagonal into thin slices* Q7 @1 Q- q: H" ]6 l, b
1 cup (250 mL) cooking oil5 o9 F/ A5 Y9 l! v$ \3 O
2 1/2 Tbsp (30 mL) oyster sauce5 k# l9 l/ m; A% B! @/ A/ _1 i
2 Tbsp (25 mL) light soy sauce9 p/ |: k% W  Z" x5 f% g
3/4 Tbsp (10 mL) dark soy sauce
: b. ]1 ?8 j, O; I1 Tbsp (15 mL) sugar
6 a; g; }- _* Qa few drops of sesame oil) h7 [7 `, c: _
2 cloves garlic, crushed5 Q/ d+ }+ _9 \8 r2 q7 z% t
1/2 cup (125 mL) chicken broth+ z1 R  ?$ a( ^! H/ j
2 Tbsp cornstarch (if desired)

Directions:
4 \3 I2 o- }) O  e+ tSlice beef and mix together marinade ingredients. Add marinade to beef and marinate for thirty minutes. Add 1 1/2 tablespoons of oil to beef, mix in thoroughly, and marinate beef for another thirty minutes. While beef is marinating, prepare the vegetables.
, l3 n+ q  Q0 u' NHeat wok and add 1 cup of oil. When oil is ready, add beef and stir-fry until it is nearly cooked. Remove beef and set aside on a plate. Drain the wok and wipe clean with a paper towel.
4 p, ?$ R) c$ fAdd 1/2 cup water to wok. Bring the water to a boil and add the broccoli. Cover and cook until broccoli is cooked through. Drain the wok.  
+ P0 m! X& b8 _; PHeat wok and add oil (about 2 tablespoons). Add the garlic and stir-fry for about 1 minute. Add vegetables and beef and mix together. Make a well in the middle of the wok and add the sauce ingredients. Add cornstarch, stirring to thicken. Mix sauce together with other ingredients.  Serve hot.6 L9 y7 U# P- v' h5 ?

*Add carrots and onion if desired. Boil in the wok with the broccoli (you'll need to add more water).
